- 6 or 7 medium, sliced and peeled peaches
- 1/4 cup bourbon
- 1/2 cup white sugar
- 1/2 cup of brown sugar
- 1/2 cup of flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 teaspoons of lemon juice
- 1 tablespoon butter
- 1 chilled double pie crust
Instructions
- In a large bowl, mix peeled, sliced peaches with the bourbon. Cover and sit in refrigerator overnight (or at least several hours, if not overnight.) Preheat oven to 400° F. Whisk together flour, white sugar, brown sugar, cinnamon, and salt in a large bowl. Add the peaches and lemon juice and mix until evenly coated.
- Place the rolled-out bottom crust in a 9″ pie pan, add the peach filling, dot with butter, then cover with the top crust, sealing and trimming the edges and cutting small slits for ventilation. Bake at 400°F for 35 minutes.
- Then reduce the oven to 350° for additional 25-30 minutes of baking time, or until crust is golden.
- Cover pie with a single sheet of aluminum foil if browning too quickly. Let cool and serve with vanilla ice cream.
