Ingredients

- 1 lb ground beef
- 1 tbsp olive oil
- 1 tbsp minced garlic
- 3 tbsp W sauce Worcestershire
- 1/4 cup Herdez Tomatillo & Lime
Enchilada Sauce
- 1/4 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp Tajin (chili lime seasoning)
- 1 can creamed corn
- 1 can rotel (with Serrano peppers)
- 1 1/2 cup of shredded cheddar cheese
Cornbread Mixture:
- 1 1/2 cup of yellow cornmeal (self-rising)
- 1/2 cup of flour (self-rising)
- 1/4 cup sugar
- 1 1/4 cup of milk
- 1/4 cup of sour cream
- 1 egg
- 1 tbsp apple cider vinegar
- 1/4 cup of butter or olive oil
Instructions
- Brown ground beef in olive oil until crumbly.
- Add next seven ingredients and stir until well combined
- Add corn, rotel and cheese. Stir to combine and remove from heat.
- Mix cornbread and stir into meat mixture.
- Pour into buttered 9×13 baking dish and bake at 400° for 25-30 minutes until browned.
