Ingredients

    • 1 lb ground beef
    • 1 tbsp olive oil
    • 1 tbsp minced garlic
    • 3 tbsp W sauce Worcestershire
    • 1/4 cup Herdez Tomatillo & Lime

      Enchilada Sauce

    • 1/4 tsp red pepper flakes
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • 1 tsp Tajin (chili lime seasoning)
    • 1 can creamed corn
    • 1 can rotel (with Serrano peppers)
    • 1 1/2 cup of shredded cheddar cheese

      Cornbread Mixture:

    • 1 1/2 cup of yellow cornmeal (self-rising)
    • 1/2 cup of flour (self-rising)
    • 1/4 cup sugar
    • 1 1/4 cup of milk
    • 1/4 cup of sour cream
    • 1 egg
    • 1 tbsp apple cider vinegar
    • 1/4 cup of butter or olive oil

Instructions

  1. Brown ground beef in olive oil until crumbly.
  2. Add next seven ingredients and stir until well combined
  3. Add corn, rotel and cheese. Stir to combine and remove from heat.
  4. Mix cornbread and stir into meat mixture.
  5. Pour into buttered 9×13 baking dish and bake at 400° for 25-30 minutes until browned.
